Zutaten für 2 Rollen (16 Stück):

  • 10cm Salatgurke
  • Salz
  • 1 Bund Schnittlauch
  • 150g Entenbrustfilet ohne Haut
  • Öl zum Braten
  • 3 EL Pflaumensauce
  • 1 Noriblatt
  • 1 TL Wasabipaste
  • ca. 180g Sushi-Reis (gegart)
Enten Sushi


  1. Die Gurke längst halbieren und entkernen. Die Schale mit einer Gabel längst einritzen und mit etwas Salz einreiben, danach in Streifen schneiden. Schnittlauch kleinschneiden.
  2. Das Entenfleisch in Streifen schneiden, Öl in einer Pfanne erhitzen und 2-3 Minuten braten. Mit 2 EL Pflaumensauce ablöschen.
  3. Die Rollmatte mit Frischhaltefolie umwickeln. Das Noriblatt halbieren und auf die Rollmatte legen. Die Hälfte des Reis darauf gleichmäßig verteilen, leicht andrücken und das Blatt wenden. 1/2 TL Wasabipaste auf das untere Drittel streichen. Die Hälfte der Entenstreifen, die Hälfte der Gurken und einige Schnittlauchröllchen darauf verteilen und mithilfe der Rollmatte aufrollen.
  4. Die Sushirolle in Schnittlauch wälzen und in 8 gleichgroße Stücke schneiden.
  5. Enten Sushi mit übriger Pflaumensauce servieren.
